First Parsnip Harvest
I dug a pound and a half of parsnips (Half Long Guernsey) to roast with potatoes and carrots tonight.
I love parsnips! Yum. I bet they tasted good too!
My roasted root vegetables got delayed until tomorrow, but I’m looking forward to it. I, too, really love parsnips.
I never tried Parsnips. They have been on my wish list for a long time. Maybe in 2014.
Good to hear from you: Definitely have a go at it. This is my first attempt and it is quite successful.
Mark well that the seeds take a long time to germinate. Soak them before planting them.
I grew about 35 plants – not a lot, probably 8 – 10 pounds altogether – but that’s a good starter . . . and they grew beautifully in a bed that had quite a bit of shade. I’m told you can leave them in the ground all winter and harvest them as you need them . . . through April or so.
I’ve just discovered growing parsnips and roasting them – yum! Do you have a favorite variety?
I really don’t have a favorite. This is my first year growing them so I’ll have to see how I like these and go from there. I list the variety above. All the best to you.
