Composting Cabbage Leaves
I harvested more cabbage this morning and then added the chopped leaves and stems to one of our three compost bins. I use an old stump and a 24″ machete for the chopping. The machete should be very sharp so the leaves and stems can be sliced like bread. In the bin, I mix the chopped cabbage parts with an equal volume of chopped leaves. I mulched thirty bags of leaves last fall, so they are in perfect condition for composting.
On Monday, we will make a huge batch of cabbage soup. We will make enough soup for 16 quart-size containers with 3 cups of soup in each container, enough for a nice meal for the two of us. I will post the recipe next week. When we want to eat some, we thaw it out, add some kind of grain or bean along with 2 tablespoons of soy sauce for a hearty winter evening meal. We usually have some left over. With the potato soup we made last year, we had 35 qts of soup in the freezer.
